Сучасна глобальна нестабільність, зумовлена економічними, соціальними й природними факторами вимагає глибокого розуміння та аналізу впливу таких умов на формування попиту і пропозиції в аграрному секторі. Актуальність дослідження визначається загостреним характером надзвичайних викликів, з якими стикається аграрний сектор України в умовах сьогодення. У зв’язку з нестабільністю економічно-політичної ситуації, аграрні ринки стають об'єктом посиленого впливу зовнішніх факторів, таких як військові конфлікти, економічні санкції та зміни кліматичних умов. Врахування динамічності ринку й пошуку оптимальних відповідей на виклики робить цю тему важливою для наукового співтовариства і практичних учасників аграрного сектору. Для виконання представленого дослідження було використано загальнонаукові (узагальнення, порівняння, індукція і дедукція) та емпірико-теоретичні методи (аналіз, синтез). Використання системно-структурного та статистичного аналізу дало можливість проаналізувати український аграрний ринок і визначити зміни в споживчому попиті на основні групи продуктів, враховуючи економічні, соціальні й геополітичні фактори. На основі отриманих результатів з'ясовано, що предметом купівлі-продажу на аграрному ринку виступає сільськогосподарська продукція, характеристики та особливості виробництва якої визначають унікальність аграрного ринку в порівнянні з іншими типами ринків. Встановлено, що потреби населення в харчових продуктах повністю забезпечені, в результаті чого держава має можливість експортування продукції. На основі отриманих результатів з’ясовано, що внаслідок значного підвищення цін на харчові продукти, можливої редукції асортименту даних продуктів і втрати стабільних доходів у населення, зниження споживання тваринницької продукції, риби й сезонних продуктів є висока ймовірність зміщення балансу споживання на користь хлібобулочної продукції та напівфабрикатів. Результати дослідження можуть бути використані для розробки ефективної політики державного регулювання, спрямованої на підвищення конкурентоспроможності аграрних ринків, а також можуть бути спрямовані на подальшу розробку програм і стратегій управління ризиками в аграрному секторі
